Gratin Fig & Goat Cheese
Figs are in season and that makes me so happy!
This is very much the flavours of the south of France and a trip down to memory lane for me.
I grew up picking figs from the fig tree in my garden and making that dish with my mother.
Les amis vegan there is so many delicious cheese alternative these days im sure you can find a delicous option to replace the goat cheese
Time prep: 5 minutes
cook time: 20 minutes
Preheat oven to 200°C.
Rinse and trim stems from the figs.
Slice the figs in half lengthwise before stuffing them with goat cheese or vegan alternative. Drizzle with honey and a touch of olive oil; sprinkle salt and pepper.
Let it roast until warm and bubbly, 15 to 20 minutes. Can be serve as it is or with slices of bread or crackers (gluten free pour moi!)
Play with what herbs are in season and what you can get your hands on to, I like adding rosemary or thyme.
