Mango Coconut Chia
A delicious breakfast recipe to start the day right and bring some tropical notes to your life!

They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.
Time prep: 5 minutes
In a bowl whisk together the chia seeds, coconut water and coconut milk. Add a pinch of salt. Let stand for 15 minutes to thicken, stirring regularly. In the meantime heat a pan to toast the coconut.
Can be served in a bowl or divided into 4 jars. Layer the dice fresh mango on the top.
Optional spoon of honey or maple syrup depending on your taste. I like mine without added sweetness but pick a ripe mango.
Easy to make, it also keeps really well in the refrigerator so I make mine in batch so its ready for the week.
