Recipe

Ingredients
- 3 cups Lyre’s American Malt*
- 1 cup Butter Pecan Syrup
- 4 cups Earl Grey tea
- 1 cup lemon juice
- ½ pipette of Tonka Beans Droplets Bitters

Technique
Build

Glass
Punch Glass or Stemmed Glass

Garnish
Thyme, fresh cranberries & star anise

Method
Build directly in your punch bowl or carafe & pour all the ingredients in together! We recommend avoiding adding ice- just add ice to your glassware when ready to serve to avoid over dilution. Nobody wants a watery cocktail!
Preparing this way makes it a beautiful sharing serve so all you need to do is pour & garnish with thyme, cranberries & star anise et voilá!

Home-made Ingredients

Butter Pecan Syrup:
This is one of my favourite syrups to make it’s so easy and tastes delightful. Perfect for the holiday season and as delicious in cocktails as on your pancakes!

Ingredients:
- 2 tbsp butter
- 1 cup chopped pecans
- 1 cup maple syrup
- Pinch of salt

How to:

  1. Melt your butter in a medium sauce pan

  2. Chop the pecans, add in the melted butter and cook for about 1-3 minutes.

  3. Add the maple syrup.

  4. Sprinkle with salt.

  5. Continue to cook for a few more minutes until thickened.

  6. Let it infuse for a few hours

  7. Filter to get rid of the bits and get a smooth texture for your cocktail.

Lyres is a wonderful non-alcoholic spirits company that launched in the UK from Australia! They have a range of 13 products that are great alternatives to alcohol.

Droplet Bitters, we love these bitters because they have some very interesting flavour combinations and are alcohol free!

For the tea we’ve used a beautiful Earl Grey tea from The Palais des Thé but you can use any brand you like as long as it’s good quality.
